My Vegan Friendly Passover

Each year, as a celebration of spring, birth and rebirth, and the journey from slavery to freedom, Jewish people like myself observe the wonderful holiday known as Passover!

The Passover Seder is a Jewish ritual feast that marks the beginning of the celebration, and I was fortunate enough to rejoice in it over the weekend with the people I love most in the world!

While family dinners can be notoriously tough for vegans, I found that with a little extra planning, I was able to have a delicious meal that didn’t have me leaving the table hungry.

By cooking with non-dairy milks, and substituting carbs with fibrous vegetables like spaghetti squash, cauliflower rice and zucchini noodles, I was able to keep up my whole food diet while also getting the nutrients I need to feel my best! This spaghetti squash with ratatouille was so yummy!
