Vitamin B12 is only found naturally in animal products, so one of the biggest challenges of going vegan is finding adequate plant based sources of Vitamin B12. Braggs Nutritional Yeast happens to be fortified with lots of amazing vitamins, especially the B vitamins, and wonderfully, Vitamin B12. While it can be an acquired taste for some, it is capable of lending a “cheesy” flavor to foods and sprinkling it a vegan risotto or a quick pesto, is a good way to get some into your diet.
One tablespoon contains 40% of your RDA, so if you want 100% you’ll have to eat 2 and ½ tablespoons,…but this is so yummy that won’t be hard to do!
3 cloves garlic
2 cups fresh basil leaves
½ cup pine nuts or other nuts – I used cashews and they worked really well
2 tbs olive oil
5 tbs nutritional yeast
Salt and pepper to taste
This made enough for me to coat 2 generous servings of pasta.
Run a food processor and add the garlic cloves and nuts. Scrape down the bowl and mix in the basil leaves and olive oil, and process well. Then add the nutritional yeast and season to taste and process thoroughly. Serve over pasta, or get creative with pizza or bread.
